Chicken Do Pyaza Preparation

Chicken Do Pyaza is an Indian preparation of Rich & thick gravy chicken with Onions(Pyaz).cut in a unique shape making it 'Do Pyaza'. It tastes delicious and its one of the best pairs with bread like tandoori Roti, Kulcha, Nan, Paratha, etc.

Ingredients::




Bay leaf 1 piece
Coriander seeds 1 teaspoon
Cumin seeds 1 teaspoon
Black pepper 7-10
Long 6-7

Cardamom: 4-5 pieces
Chicken 600 grams(Depends on your quantity)
Dry red chili 2 pieces                                
2 Finely chopped onions
2 onions(cut into large pieces)
Finely chopped tomatoes 1 cup (2 pieces)
Ginger & Garlic paste 1 teaspoon
Finely chopped coriander leaves 1 cup
Curd 1 cup (100 grams)
Green chili 3 pieces
Kashmiri red chili powder 1 teaspoon
Turmeric powder 1 teaspoon
Sugar: 1/2 Spoon
Salt As per taste
Oil: 4-5 spoon
Kasuri Methi: 1 Spoon

Preparation::


Chicken Marinate- Cut chicken into even size pieces and marinate with 1 tsp ginger garlic paste, 1 tsp salt, 1 tsp cumin powder, 1 tsp coriander powder, 1/2 tsp turmeric powder, 1 cup curd,  and 1 tsp red chili powder  Mix well and keep it covered in a refrigerator for 1 hour.

Do Pyaza preparation- 
  1. First of all, heat the Kadai and slow down the heat once it becomes hot. Now all the spices are dry red chili 2 pieces, bay leaf 1 piece, coriander seeds 1 teaspoon, cumin seeds 1 teaspoon, black pepper 7-10, long 6-7,  cardamom 4-5 pieces and fry on low heat for 2 minutes. Keep them separated.
  2. Now put 4-5 spoons of oil in a pan and heat it and add 1 spoon ginger-garlic paste. Fry it a little.
  3. Now add finely chopped onions and fry them till they turn golden in color and add green chili. Keep on stirring.
  4. After frying the onion for 4-5 minutes, add 1 spoon of salt, red chili powder, chicken masala(optional), cumin powder, coriander powder, and 1/2 spoon turmeric powder. Fry the masala properly.
  5. Now add tomato puree and mix it. Fry the masala till the tomato melts and the water of the tomato becomes dry.
  6. Now after frying the masala for 5-7 minutes, add 1 cup curd after the tomatoes have melted. Mix the curd properly. You don't leave the place yet and keep on stirring.
  7. Now add 1.2 teaspoons of sugar, few large pieces of Onions(not the whole) and fry the spices with curd till the oil looks different from the masala.
  8. Now put the lid and let the masala cook for 4-5 minutes. After cooking the masala for 4-5 minutes, add the chicken and the mix you kept separated at first. Mix well the chicken with spices and add rest of the chopped onion in large size to the chicken and mix it and let it cook for 15 minutes. Cover the lid.
  9. See how much the chicken is cooked and stir it occasionally.
  10. After cooking the chicken for 15 minutes, add green coriander and mix it with Kasuri Methi and garam masala. 
  11.  Your Chicken Do Pyaaza is ready to serve.
